I was sitting on my couch on a lazy Saturday afternoon and I thought, yanno what would be really good? Tortellini Soup.
It had been FOREVER since I had Tortellini soup and to be honest, I’m not really a soup person. I usually eat it when I’m sick and that’s about it. This recipe is SO damn good that I doubled it and I’ll freeze half for days when I don’t feel like cooking (about 3-5x during the work week). You’re going to LOVE this one.
Here’s what you’ll need (for a single batch):
1 package of tortellini
4 cups of chicken broth
1 14.5oz can of diced tomatoes – undrained
1 medium onion – diced
3 cloves of garlic (eyeball it)
2 cups of spinach (or more if you’re like me and can’t get enough spinach in your life)
1 bay leaf
Salt and pepper
Here’s the plan:
Grab a huge pot and turn the heat up to medium. Add olive oil, and when it is heated up, add the garlic and onion. Let the garlic become fragrant and the onion become translucent (I feel like that’s one of my vows of life “may your garlic be fragrant and your onion become translucent.”) Then add chicken broth, tortellini, diced tomatoes, spices, and 1 cup of water. Bring it up to a boil and then let it simmer. Stir in the spinach and let it become wilty. Serve immediately, and add a little parmesan on top, just for fun.
So good. So cheap. Only 1 vegetable to dice up. Quick and easy – just how I like it.
