It’s been a WHILE. I’m back on my A game though, so not to worry. I haven’t been meal prepping lately but I figured tonight’s meal prep was worth a post. Here we are. Hi. How are ya?
I’ve been watching a lot of Julie and Julia lately (it’s on Netflix and I’ve watched it twice in 48 hours, it’s fine, I’m fine) and she has really inspired me to get back in and love on my kitchen. Today, I blew my own meal preppin’, healthy eatin’ mind. It’s real quick, only took like 20 minutes.
Here’s what you’ll need:
Frozen broccoli (the kind where you steam it in the bag)
Pumpkin ravioli from Aldi/Trader Joe’s/Whole Foods
Gardein meatless meatballs
Butter
Minced garlic
Sage
Cinnamon
Nutritional yeast
Here’s the plan:
Cook the ravioli according to the package’s directions. While it’s cooking, put the steam-able bag of broccoli in the microwave. As soon as the broccoli is done, carefully take it out of the microwave.
This is my favorite part of this post.
Take a small bowl and add 2 or 3 tbsp of butter (or ghee). Add minced garlic, and melt in the microwave. Whisk it into submission. Add a pinch of sage, a little cinnamon, and a little nutritional yeast. Whisk again.
Boom. It’s like brown butter with a twist, yanno? And let’s save ourselves a pan and do it in the microwave instead of on the stove. #AintNobodyGotTimeForThat
Cook the meatless meatballs according to instructions. Plate it and make it pretty. Add some flax/chia/hemp seeds because you love yourself and your digestive system. Done.
